The story
St. Lawrence is Chef/Owner Jean-Christophe (J-C) Poirier’s deeply personal project, a restaurant that marries classic French technique with the distinct gastronomic identity of Quebec. After more than 25 years in the Canadian culinary scene, Poirier opened St. Lawrence in 2017 as a love letter to his heritage and his formative years cooking in renowned Montreal kitchens. Here, he practices what he calls “haute country cooking”—rustic, refined, and rooted in time-honoured traditions.
The restaurant’s heart is its evolving table d’hôte menu. Through spring and summer, the four-course experience draws inspiration from Provence, guided by the rhythm of local farmers and the market. Dishes change with the seasons—think king salmon with nettles and vermouth sauce, or duck breast with farro verde, rhubarb, and foie gras. An optional beverage pairing, including an alcohol-free selection, complements the meal. The atmosphere is intimate and transportive, with a small dining room, a chef’s counter facing the open kitchen, and a traditional bar where walk-in guests can order à la carte.
St. Lawrence was awarded One Star by the Michelin Guide, a recognition that underscores the precision and soul in Poirier’s cooking. The restaurant has also been named Restaurant of the Year by Vancouver Magazine, placed among Canada’s 100 Best Restaurants, and earned a spot on the World’s 50 Best Discovery list. These honours reflect a kitchen that values simplicity as the ultimate form of sophistication.
