The story
At Suyo on Vancouver's Main Street, Chef and Owner Ricardo Valverde invites guests into his homeland. The restaurant's name comes from the Quechuan word for "homeland," and every detail reflects that deep personal connection. Valverde, who moved from Peru to Canada over two decades ago, draws on his extensive culinary career to present Peruvian cuisine with a modern approach.
The menu celebrates the diversity of Peruvian cooking, which combines influences from four continents — from pre-Inca ingredients like aji hot peppers and potatoes to later contributions from French, Italian, African, Chinese, and Japanese traditions. Dishes include ceviches, tiraditos, causas, and anticuchos, each reimagined through Valverde's lens. "These are dishes and flavours unique in its style, my way to invite you into my homeland," he says.
Suyo has earned recognition from the Michelin Guide and is also listed on 50 Best Discovery, marking it as a destination for modern Peruvian cuisine in Vancouver. The team includes Operations Partner Felix Ng, a tech entrepreneur, and General Manager and Partner James Reynolds, who oversees the wine program with an impressive list of South American bottles and vibrant cocktails.
The atmosphere is designed to evoke the landscapes of Peru — the chaos of the Amazonian rainforest, the ritual practices of the Ancient Incan people, and the bounty of the Andean Mountains. Each service aims to bring guests closer to these places and the feelings they inspire. For larger groups, Chef Valverde curates a Chef's Tasting Menu that showcases the best of modern Peruvian cuisine through the seasons.
