The story
On Whistler’s Village Stroll, Il Caminetto brings a fresh, contemporary approach to Italian cuisine. Culinary Director James Walt, a James Beard House veteran and BC Restaurant Hall of Fame inductee, draws on his experience as Executive Chef at the Canadian Embassy in Rome to create a menu that marries traditional Italian cooking with the best ingredients from British Columbia’s farmers and producers.
Executive Chef Mark Mcloughlin works alongside Walt, crafting a dynamic menu that changes with the seasons. The kitchen’s commitment to handmade pasta is central—the team rolls up to 30 kilograms of pasta every morning. The result is an Italian dining experience rooted in place, where local produce, foraged ingredients, and mountain-inspired flavours take centre stage.
The wine program at Il Caminetto is as thoughtfully composed as the food. The list explores Italy from north to south—Piedmont, Veneto, Sicily, Puglia—while proudly showcasing British Columbia’s own vineyards. A Coravin system allows guests to enjoy premium wines by the glass, and the sommeliers are happy to pair selections with any à la carte or set menu. This dedication to wine earned Il Caminetto the Wine Spectator Best of Award of Excellence, an honour the restaurant has held consistently since 2019.
The restaurant offers dinner service daily from 5pm, with outdoor seating available during warmer months. Whether you are settling into the patio after a day on the slopes or enjoying a quiet evening inside, the setting is refined yet welcoming—a place where Italian hospitality meets the spirit of Whistler.
