The story
At Deli Boutique・Uncle De Abalone, the story begins with founder Zhang Hede, known to all as “Uncle De.” Born in the ancient port of Yangjiang, his passion for seafood began in 1988. He traveled widely, learning from celebrated chefs and honing his understanding of abalone, eventually opening his first abalone-focused Cantonese restaurant, “Deli Royal Kitchen,” in 2000. In 2011, he brought his vision to Guangzhou, opening “Deli Private Kitchen” in Panyu – an intimate, high-end Cantonese seafood restaurant with just nine private rooms.
Uncle De’s philosophy is one of obsession with quality and craft. Every abalone is treated individually, its unique texture respected. His signature abalone sauce is made from the pure juices released during slow cooking, never relying on commercial shortcuts. This dedication to authentic Cantonese seafood has earned the restaurant a Michelin Recommended award – a natural recognition of its uncompromising standards.
