Triton serves traditional Dalmatian cooking in Blato, operating at 15 Zaklopatica since 1988 under founder Tonči Jurica and current chef Ljubo. The Croatian island kitchen relies on minimal intervention, letting olive oil, garlic, and tomatoes carry the weight of every plate. This restrained approach earned a 12 rating from Gault&Millau last year. Guests consistently return because the preparation never obscures the natural quality of the catch.
Ljubo pulls daily catches from the surrounding waters and harvests vegetables from the family’s own plots. Pasta tossed with fresh scampi or slow-cooked lobster appears alongside crisp fish carpaccio and classic buzara preparations.
