The story
Proto Fish Restaurant stands at the intersection of Široka and Vara streets in the heart of Dubrovnik’s Old City, a place that has been serving seafood since 1886. Its long tradition is built on the careful preparation of diverse fish and shellfish, with a menu that changes daily based on what the Adriatic provides. The restaurant was renovated in 2018, yet retains the character that has drawn dignitaries like King Edward VIII and Wallis Simpson, as well as generations of local families and international visitors.
The gourmet menu is inspired by recipes from Dubrovnik’s aristocratic and commoner families, passed down through generations. Chef Boško Lonac selects the finest seasonal ingredients—Adriatic fish, crabs, molluscs, and organic vegetables from nearby Župa Dubrovačka and the islands of Konavle—to interpret traditional Mediterranean cuisine with a contemporary touch. The catch of the day is a highlight, and guests are encouraged to let the staff explain the menu or filet the fish at the table. The Michelin guide, which awards Proto a Michelin Plate for good cooking, notes: “Those in the know head to the lovely hidden roof terrace to enjoy the carefully prepared seasonal Mediterranean dishes.”
