The story
Located just 1.5 kilometers from the Gospić highway exit, Restaurant Maki has been a pillar of traditional Lika cuisine since opening its doors as a humble konoba in 1971. Over five decades, this establishment has expanded into a spacious hall with seating for hundreds, yet the kitchen remains devoted to local ingredients and family recipes preserved from the restaurant's earliest days.
The menu centers on robust regional staples designed for those who appreciate substantial meals. Guests often return for the goulash crafted from Buša, an autochthonous Lika cattle breed prized for its deep flavor and resulting in a thick, meat-rich sauce. The kitchen also maintains a steady supply of janjeća kalja, a comforting stew blending lamb with cabbage, and kiseli kupus sa suhim mesem, which pairs fermented greens with dried pork. Various items are prepared under a baking bell, a technique that locks in juices and delivers the dense, savory textures typical of Lika cooking.
The expansive dining room accommodates large parties and passing travelers, yet the interior maintains a simple, unpretentious character that reinforces the family roots of the project. Friendly service keeps the energy warm and engaging, creating a lively space that appeals to both locals and tourists exploring the Lika region. These hearty flavors find a natural companion in the bar list, which features an array of homemade spirits. Patrons commonly finish their meal with a pour of Velebit rakija or a smooth shot of šljivovica, rounding off the experience with strong regional aromas.
The kitchen dedicates a separate section to desserts that honor classic formulas while introducing a touch of refined presentation. Regular visitors recognize the value in sticking to proven favorites rather than chasing trends. The house pancakes stand out as a consistent choice, delivering a soft texture and gentle sweetness that provides a refreshing counterpoint to the heavier, savory dishes dominating the rest of the menu.
