The story
On the island of Pag, between Novalja and Stara Novalja, Boškinac is more than a restaurant—it is a place shaped by the surrounding vineyards, olive groves, and pine forest. The kitchen, led by chef Matija Bregeš, focuses on carefully selected local ingredients: scampi, Pag lamb, cheese, ricotta, fish, herbs, honey, and olive oil. These elements come together in dishes that speak to the island’s character, interpreted through a modern lens.
The menu is built around seasonal produce, with the kitchen team drawing on the gastronomic potential of Pag. The “Island Experience” tasting menus—available in six or eight courses—offer a progression through dishes like buzara, octopus, vegetables, pigeon, ray, cuttlefish, lamb, and plum. Each course is designed to pair naturally with the estate’s own wines, reflecting a philosophy where food and wine are inseparable. The wine list also features key Croatian labels and a curated selection of Champagnes and sparklings.
Since 2020, Boškinac has held a Michelin star, a mark of its high-quality cooking rooted in local tradition. This recognition underscores the team’s commitment to preserving the richness of Pag’s ingredients while staying attuned to global culinary trends.
