The steady execution of this approach recently secured a 14-point rating from Gault&Millau, reflecting decades of consistent standards rather than fleeting trends.
Fresh Kvarner scampi anchors the menu, appearing in simple broths, creamy risottos, and handmade pastas when winter conditions allow the catch to reach peak sweetness. The kitchen balances these delicate shellfish with heavier cuts cooked on a Spanish Josper grill, which imparts a clean charcoal aroma to lamb racks and aged beef.
