Hidden Wine Bistro operates on a simple truth: use exclusively local and fresh ingredients from the Central Market, with a zero waste mindset. This dedication to supporting the local community and reducing their carbon footprint is reflected in a seasonal menu that changes regularly. Each dish is inspired by both local and global traditions, creating unique compositions that celebrate the moment. This commitment to sustainability and creativity earned the bistro a Michelin Recommended distinction for 2026.
The idea for Hidden Wine Bistro came from Deni Srdoč, who explored the world one bistro at a time before deciding to put his all into this project. The result is a one-of-a-kind space designed for those eager to enjoy wonderful wine and bites. The team believes the best wines are discovered by continuous tasting, and their carefully curated selection hides gems from around the world, available by the bottle or by the glass.
The autumn menu offers a palette of flavours. Starters include a Beef tartare with capers, tarragon, and dukha, or a Pear dish with yoghurt, walnuts, and radicchio. Mains range from Mackerel with onion and Muhamara to a Croatian beef steak dry aged with demiglace and spinach. There are also vegetarian options like Pumpkin risotto and Steak Cauliflower. Each dish tells a story, handpicked from fresh, seasonal ingredients and composed into signature Hidden creations.
