The story
In the heart of Trogir, a UNESCO-listed town, Konoba TRS occupies a 13th-century stone house. The name comes from the vine trellis – trs in Croatian – that shades the terrace, creating an airy, relaxed space. This is a restaurant that leans into its history while looking forward, earning a Michelin Recommended distinction for its refined yet unpretentious approach to Mediterranean cuisine.
Chef Hrvoje Perica describes his role as a mediator between nature and the plate. His philosophy is grounded in Dalmatian produce: "Every bite should tell the story of our region." The cooking is personal, rooted in local ingredients and traditions, but expressed with modern precision.
Dinner at Konoba TRS is built around three tasting menus, each priced at 59 €, with a five-glass wine pairing for 39 €. The menus change daily, but the structure reveals the kitchen’s range. One menu opens with a white fish and langoustine ceviche with orange and honey emulsion, followed by an orzotto with shrimp, scallops, and bottarga, then tuna with chickpea cream and langoustine bisque. Another features beef tartare with a cheese sphere, a mushroom and confit egg yolk course with fresh truffle, and a choice of dry-aged black Slavonian pork or beef tenderloin. A vegetarian menu offers beetroot tartare, cauliflower with truffle and Pag cheese, and mushroom risotto.
The atmosphere is casual and traditional, but the cooking is precise and thoughtful. Chef Perica’s food is direct – ingredients speak for themselves, enhanced by technique rather than disguised. The Michelin recommendation recognizes this balance: a kitchen that respects its roots while delivering a memorable, contemporary meal.
