The story

Restaurant Mare in Trogir – Modern Mediterranean Cuisine by Father & Son

Tradition meets innovation on the Trogir waterfront

At Restaurant Mare in Trogir, the culinary philosophy is straightforward: perfection on every plate. Here, tradition meets innovation, and each bite becomes a journey through the finest flavors of the Mediterranean. The restaurant proudly holds a Michelin recommendation, a recognition that speaks to its dedication to creating unforgettable moments and unique gourmet experiences.

A father‑and‑son kitchen

The heart of Mare beats in its kitchen, where Executive Chef Robert Predrag Žmire and his son, Saucier Toni Ukić, have been working side by side for eight years. Despite the difference in age, they have successfully merged their skills and passion for food, sharing every moment of their shared labor. Experience and tradition meet innovation and modernity, a unique approach that has defined the restaurant for the past four years. Their style is unmistakable, their dedication soldier‑like, and the love for their craft is visible on every plate they set before you.

Local ingredients, Mediterranean soul

The philosophy at Mare is simple: select the freshest seafood and carefully chosen local ingredients, then prepare each meal as a reflection of a passion for culinary art. The chefs blend classical methods with modern techniques to offer every guest a gastronomic delight. The menu is shaped by the environment, the nature of the Mediterranean, and an often‑immoderate love for Dalmatia. Sometimes they combine the seemingly incompatible, sometimes they lean on the scents of childhood, and sometimes an excess of traditional pride results in dishes that make you close your eyes with every bite.

Mare works closely with local family farms (OPGs), whose dedication to growing and producing the highest‑quality ingredients forms the foundation of the restaurant’s success. From fresh seafood to organically grown vegetables and aromatic herbs, every product from these partners adds an incomparable taste and freshness to the dishes.

A terrace with history

The restaurant sits at Lučica 11 in Trogir, offering a terrace that breathes history and elegance. Restaurant Mare is not just a place for dinner – it is a destination where every detail reflects a commitment to quality and flavor. The terrace provides a breath of the past while the bite on the plate writes the future for your palate. The atmosphere, infused with heritage and refinement, makes every meal a moment to remember.

With a Michelin recommendation and a cuisine that honors both tradition and modernity, Restaurant Mare stands as one of the finest gastronomic destinations in Trogir, delivering modern cuisine that is both rooted and daring.

Located in the harbour of the old part of the island of Čiovo, overlooking the Trogir city centre, Mare has perhaps one of the most beautiful positions for a restaurant on the coast. Even in summer, it is not crowded, while on the other side, the city is teeming with tourists. We arrive at Mare in late autumn, just a few days before the close. The attentive personnel do not show any fatigue from the long season. The main asset of the restaurant Mare is its creative approach to seasonal ingredients, while respecting traditional Dalmatian flavours. The rich selection of local wines is also something that Mare prides itself on. There are not many dishes on the menu, which immediately made us happy because it is above all a sign of the freshness of the ingredients. Ode to the Fisherman is a dish dedicated to the old fishermen who used to moor their small or larger boats in the harbour of Čiovo, from where, depending on the full moon, the wind or the time of year, they would go “fishing”. It is a salted monkfish with tomato emulsion, garlic cream, pickled shallots and capers. The ingredients are skilfully balanced, and you can feel the taste of the fish and the seasonal vegetables. Here, lovers of tradition can also eat the real Dalmatian pašticada (braised beef) with prunes and bacon, and homemade gnocchi, while those who prefer more modern flavours will enjoy the lamb with Jerusalem artichokes and dates or the octopus in roasted pepper sauce. We suggest to surrender to the experienced culinary hands of chef Robert Predrag Žmire and his daily creativity and order the tasting menu.
