In the heart of Zagreb, Noel presents a refined expression of modern cuisine that has earned it a Michelin star. Chef Bruno Vokal leads the kitchen with a philosophy rooted in sustainability, craftsmanship, and a zero-waste approach. Every dish is described as a work of art and dedication, where the finest seasonal and locally sourced ingredients are transformed into balanced, immersive compositions.

The restaurant’s atmosphere is one of refined elegance, designed to let the food speak. Guests choose from a rotating selection of tasting menus, each reflecting the culinary identity of the house. The Noel Essence Menu, a five-course experience, is the pure essence of Noel’s excellence. It features dishes such as dry-aged local trout with almonds, broccoli, and onion; sweetbread with small veal salad, gnocchi, and beurre blanc; and a green apple dessert with gingerbread and cardamom. The menu can be elevated with a wine pairing or the Sommelier’s Iconic Selection.

Noel’s modern cuisine is built on a strong emphasis on flavor harmony and ingredient refinement. The kitchen highlights the complexity of dry-aged fish and local piglet, while dishes like the Adriatic prawn with squash, tangerine, and caper oil showcase the region’s bounty. A signature dish with caviar is available as an optional addition.

Beyond the tasting menus, Noel offers a three-course lunch and seasonal creations like the Noel Winter Echo, which presents the kitchen’s most ambitious work. For over a decade, the restaurant Noel has stood at the very top of Zagreb’s culinary scene, renowned for its thoughtfully composed dishes, impeccable service, and exclusive fine-dining experience. The return of Bruno Vokal, who successfully led the kitchen from 2020 to 2023, brings new energy and a distinctive creative touch to Noel’s cuisine. The Essence menu features more than a dozen individual dishes, occasionally accompanied by a surprise inspired by the chef’s creativity. The dinner begins with four amuse-bouche, among which a particularly striking oyster in a white seafood sauce with a caviar crumble stands out blending the flavours of the sea with luxurious ingredients. Next come the Adriatic prawn, paired with pumpkin, mandarin, and caper oil, a dish that skilfully balances marine and continental notes. This is followed by a flavourful štrukla, a classic from Vokal’s first tenure at Noel, and dry-aged trout served with almonds, broccoli, and onion, highlighting the rich taste of aged fish perfectly balanced with its accompaniments. The highlight of the evening is the exquisitely prepared veal sweetbread with beurre blanc, a sauce rooted in classic French cuisine. The dessert section begins with a modern interpretation of šnenokle (ile flottante), paired with green apple, gingerbread, and cardamom followed by a refreshing combination of citrus and goat yogurt. The evening concludes with three petit fours, small sweet surprises that complete the gastronomic journey. At Noel, a dining experience lasts at least three hours, supported by the professional and enthusiastic service. In addition to two extended tasting menus, the restaurant also offers a three-course lunch. The wine list is extensive and thoughtfully selected, and the best approach is to follow the recommendations of Kristijan Harjač, Croatia’s sommelier champion, who chooses the perfect pairings for each dish.
