The story
Hatsu Restaurant Brno began as a Japanese-Korean culinary project born from two brothers sharing a single vision for their first independent venture. The name translates to the beginning or first child, a meaning reflected in their logo where a sun rises over a bonsai tree and a mountain range. The landscape represents Mount Fuji alongside the Trường Sơn Đông in Vietnam, anchoring the kitchen’s cultural heritage. Owner and chef Hoàng Vũ Văn works alongside his brother and sushi master Tùng Phạm Thanh to maintain that deliberate pace.
Guests step into a dining room reflecting the quiet discipline of Japanese-Korean cuisine. Plank flooring and low wooden panels guide the eye toward softly lit booths and communal tables. This layout prioritizes conversation while keeping sightlines open to the kitchen counter.
