The story
Da Pietro Grill in Pilsen builds its grill cuisine around direct heat and deliberate ingredient choices. The kitchen grinds beef in-house before shaping patties and roasting cuts over charcoal and beech wood. Organic flour arrives from a small mill roughly one hundred kilometres away to form the bun dough. Eggs arrive daily from Šumava farms while the rest of the meat comes straight from regional Czech producers.
Guests sit along a long wooden counter that faces an active cooking line. This layout keeps the preparation visible without creating noise barriers between the dining area and the flames. The staff selects and imports their own bottle list, focusing on small growers across Italy and Austria. Natural acidity and restrained oak define most of the pours.
The menu centres on straightforward preparations that let the wood smoke speak. Thick cutlets and seasoned steaks receive brief rests before slicing. Their signature burgers arrive on freshly baked rolls with minimal toppings so the charred edges remain prominent. A Gault&Millau score of eleven reflects this disciplined approach to grill techniques and finish.
