Tucked into a courtyard near Kongens Have in Copenhagen's Indre By, Alouette is the kind of place where nothing is accidental. Chefs Nick Curtin and Camilla Hansen have built a restaurant where the thinking runs from soil to plate and back again — vegetables grown with intention, animals raised on considered diets, and even mushroom scraps composted to feed the next season's produce. It is a closed loop made delicious.

White Guide recognised this coherence at the highest level, awarding Alouette its Global Masters distinction in 2026. The citation says it plainly: "Det hele hænger sammen" — it all hangs together. That is a rare thing to be able to say about a restaurant, and rarer still to earn it from one of Scandinavia's most rigorous dining guides.

From Bryggen to a Copenhagen Courtyard

Alouette was not always where it is now. Curtin and Hansen relocated the restaurant from Islands Brygge — a harbour-side neighbourhood where graffiti once set the mood and an old painted elevator rattled guests up to a first-floor dining room — to its current address on Kronprinsessegade. The move brought a sharper sense of place. The new setting, a quiet backyard steps from the royal gardens, suits the restaurant's evolved identity: still bold in its convictions, but with what White Guide describes as a "crystal-clear line about where everything comes from."

The People Behind the Plates

Nick Curtin brings a résumé that spans New York kitchens and a formative stint at Noma. That double grounding — the precision and ambition of New York, the ingredient-led rigour of Copenhagen's most influential restaurant — shows in how Alouette operates. This is not cooking that performs its philosophy; it simply enacts it, quietly and consistently, from the sourcing decisions to what lands on the table.

The result is a dining experience with genuine integrity, and one of the more compelling reasons to seek out a table in Copenhagen.

Graffiti, the age-old signal for teen spirit and restless edginess, covers every inch of the harbor area Islands Brygge’s shoddier side. “Rock Island” we read on the sign above the door before entering the ambitiously painted elevator that rattles us up to the first floor where Chefs Nick Curtin and Andrew Valenzuela greet us in their ultra-chic lair. They’ve both toiled in New York, and likewise, both done due diligence at Noma.

It all comes together! From what’s on the plate in harmony with the wines, to how the vegetables are grown, what the animals eat, how mushroom waste is composted and feeds back into the vegetables' growth—and we could go on like this. Nick Curtain and Camilla Hansen have relocated their restaurant, Alouette, from Bryggen to the city center, specifically a courtyard just outside Kongens Have. And as always, with a fantastic sense for how the space enhances the overall experience, which is now even more fully realized through a crystal-clear focus on where everything comes from.
