The story
Bistro Lupa is a Copenhagen bistro that has been rethought from the ground up. The team behind it – the same group that runs Restaurant Ark and Beyla – set out to prove that plant-based cuisine can be exciting, high-quality, and deeply satisfying. The result is a place where friendly service, meticulous craftsmanship, and a commitment to sustainability are inseparable. In recognition of its approach, Bistro Lupa holds both a Michelin Bib Gourmand (for good quality, good value cooking) and a Green Michelin Star – one of only two in the Nordic region, and one of just thirteen fully plant-based restaurants worldwide to earn that distinction.
The menu at Bistro Lupa changes with the seasons, drawing inspiration from what the team can forage in the local landscape. Founder and CEO Jason Renwick, an Australian expat, spends his days foraging for the restaurant himself, bringing back wild herbs, mushrooms, and greens that define the kitchen’s expression. Executive Chef Brett Lavender, who honed his craft at two-Michelin-starred restaurants in Tokyo and worked at Relais & Châteaux properties around the world, leads the culinary team. Together, they create dishes that are first and foremost exciting – and happen to be entirely plant-based. The food challenges stereotypes about vegan cuisine, offering a bistro experience that is both conscious and celebratory.
