A century of Danishness, rethought

For more than a hundred years, the cellar space on Frederiksberg Allé has been a place for Danish hospitality. At Bjørnekælderen, chef Thomas Wetle and Kirsten Vinther continue that tradition — on their own terms. "Smørrebrød is not a museum," they state plainly. "It is an idea. An idea you can take apart, think through, and reassemble without the bread as a base."

This philosophy defines the restaurant. The menu moves fish before meat, season before trend. It is primarily pescatarian, without preaching. The cooking is rooted in the classic Danish open-faced sandwich, but freed from its bread-and-butter foundation, becoming a way of thinking about food rather than a fixed dish.

From the cellar, a view of the sea

The atmosphere is described as "mental havudsigt" – a mental sea view from a basement on Frederiksberg. The space is intimate, with air conditioning for comfort and outdoor seating available when the weather allows. Dinner service runs from Wednesday to Saturday, with the kitchen taking last orders at 21.30. A summer lunch opening is planned.

Recognition and a winning dessert

In February 2025, Thomas Wetle won 'Årets Ret' (Dish of the Year) in the Sweet category for a dessert featuring sour milk ice and sugar kelp – proof that sweetness can be taken seriously. The winning dessert will find its way onto the menu.

This thoughtful, value-driven approach earned Bjørnekælderen a Michelin Bib Gourmand in 2026, an award that highlights good quality, good value cooking. It is modern cuisine with a clear Danish soul, served in a space where history and reinvention sit side by side.
