The kitchen is flanked by an in-house micro-dairy producing mozzarella and burrata, and a charcuterie operation turning Denmark's finest pork into sausages and cured meats. These aren't talking points — they are the foundation of everything that arrives at the table.

The pizza and what goes on it

The wood-fired pizza at Bæst has been recognised among the best in Europe, a distinction that Gambero Rosso underlined with its 2 Slices award in 2025. The logic is straightforward: when the cheese is stretched in-house that morning and the charcuterie was cured on the premises, the pizza tastes like it. The open kitchen — described by White Guide reviewers as "beautiful" and "atmospheric," with cooks visibly working hard — makes the whole process part of the dining room itself.

Locally rooted, traditionally made

The menu is framed as "a tribute to the finest produce from our surrounding area, with a special focus on our own micro-dairy and charcuterie." That commitment to local ingredients and traditional craftsmanship runs through both the evening menu and the weekend lunch service. There are good days and bad days at Bæst. The food is always good—the service determines the outcome. This evening starts off poorly with a tiny glass of sparkling wine—you could probably pour ten glasses from the bottle, each costing one-fifth of its price—and almost non-existent service. So while the always-delicious dishes from the beautiful, atmospheric open kitchen, where the chefs are working hard, are being hurried over to our table, our waiter has vanished into thin air. Consequently, our Langhe Nebbiolo 2019—which we consider a better choice than repeatedly chasing down invisible refills—only arrives by the time we reach course number six, which, ironically, also becomes our last hot dish. We only have the table for two hours anyway. That’s fair enough, just not when the service can’t keep up the pace.
