The story
Frisk Fisk in Zürich builds its reputation on strictly curated Nordic seafood, a focus that recently earned the kitchen a Gault&Millau score of fourteen. Founder Matteo Trivisano spent years persuading Oslo-based smoke master Frederik Møller Andersen to bring his artisanal catch to Switzerland. The menu follows a purist approach where technique highlights the ocean itself.
