The building sits in the historic heart of Christianshavn, and that sense of place runs through everything — the unhurried pace, the relaxed atmosphere, the feeling that this is a neighbourhood restaurant that happens to cook at a very high level.

The White Guide has recognised Kanalen at Masters level, noting that the cooking is marked by "ro og godt værtskab" — calm and good hospitality — with guaranteed precision on every plate. That assessment rings true in how the restaurant presents itself: no theatrical flourishes, no unnecessary complexity, just carefully composed food in surroundings that put guests at ease.

The Kitchen and Its Approach

Leading the gastronomic direction is Peter Yung, named Cook of the Year in 2017. His cooking draws on classical European — and particularly French — foundations, refined through international experience spanning Italy, Peru, London and China. The result is a kitchen that stays grounded in seasonal produce while allowing that broader perspective to surface in detail and balance.

The menu centres on seafood and grill, with fish and shellfish, seasonal meat and game, and a strong presence of vegetables. Smaller dishes and snacks invite sharing, though a more traditional progression works equally well. Cucumber appears as a recurring ingredient — used in multiple variations — alongside the kind of carefully sourced produce that lets flavour speak without amplification.

The White Guide's account of a recent meal captures the kitchen's register well: hay-smoked scallops with cucumber variations, langoustine with corn, chanterelle and lemon thyme, pork with puffed crackling cut through by a sauce of long pepper, and desserts built around blueberries, bog bilberries, birch shortbread and walnut brownie — precise, personal and composed with clear intent. At 695 DKK for the full menu, or 495 for four courses, the value relative to the quality and the waterside setting is, as the guide puts it, "yderst fair."

The Setting and the Experience

The terraces are among the most sun-drenched in the city, and in season the restaurant opens for outdoor service with direct views over the canal and the life of Christianshavn. Guests arriving by water will find the restaurant's own moorings ready. Inside, the canal is never far from view — the slow movement of boats along the quay provides a backdrop that no amount of interior design could replicate.

For private occasions, the Anneks dining room accommodates everything from intimate dinners to weddings, confirmations and corporate events. The restaurant is part of a broader Copenhagen dining group but retains a distinct identity rooted in its location and its kitchen's particular sensibility.

Jeppe Foldager's past as silver medalist at Bocuse d'Or in 2013 serves as a positive undertone in the ever-perfected dishes, which emphasize flavor intensity, acidity, and richness in a refreshing balance. The idyllic house situated right by the canal in one of the few quiet corners of Christianshavn sets the stage for a meal defined by tranquility and excellent hospitality, guaranteeing expertly executed dishes on your plate. You won't find grand, wild creations here, but rather the very essence of a well-crafted meal. This is immediately evident in the starters, featuring prawn and mayonnaise crustades, a lightly smoked pollock cream folded with watercress and bird cherry, and an oyster finished with a twist of horseradish and pickled rosehips. The sommelier has done an excellent job pairing it with a slightly atypical Pinot Blanc "Kritt" from Kreydenweiss, offering a smoky profile with bright acidity and grapefruit notes. This complements the next course perfectly: hemp-smoked scallops served with numerous cucumber variations, a staple ingredient in Foldager’s kitchen. Service is warm yet discreet, with an attentive presence that fosters a relaxed atmosphere at every table. Overall, the six-course menu is consistently refreshing and masterfully composed. Standouts include the classic, succulent virgin lobster paired with corn, chanterelles, lemon thyme, and hibiscus powder, with the sole exception of the turbot, which was overly salted against an otherwise exquisite truffle, tarragon, and chicken jus potato purée, breaking from the otherwise flawless execution. Redemption arrives in the glass with a very light, almost Burgundian-style 2013 Pinot Noir from Eyrie Vineyard, Oregon, which beautifully complements the truffle. Beyond that, the praise is unanimous, particularly for the pork with crispy crackling, whose salty richness is brilliantly cut through by a spicy, robust sauce infused with long pepper, as well as for the two desserts, which are likely the boldest and most personal elements on the menu. Two elegant scoops of blueberry and bog bilberry, served with birch shortbread and lemon yogurt, provide both freshness and substance, leading seamlessly into the bittersweet notes of the walnut brownie, chocolate-nougat cream, and crème anglaise mousse, all balanced by a tangy cherry sorbet. At 695 DKK for the full tasting menu, or 495 DKK for four courses, the pricing is highly reasonable given the quality and the unique waterside views. Foldager remains firmly at the helm, delivering precisely what he promises: a classic, subtly modernized dining experience executed at a masterful level.
