Lago sits directly on Peblingesøen, one of Copenhagen's inner lakes, and the name says exactly what it is: a restaurant in honest conversation with its surroundings. That straightforwardness extends to everything on the plate.

Cooking That Connects the Dots

What distinguishes Lago is a quietly rigorous approach to sustainability — not as a talking point, but as a working method. A recent White Guide review, which awarded the restaurant a "Very Fine Level" distinction, captures it precisely: asparagus peelings that might otherwise be discarded are instead used to build flavour in a creamy mussel fumé with citrus oil. Those same white asparagus, now peeled, reappear later in the menu alongside braised breast of free-range pork and a cauliflower mousseline. The mousseline itself is made from the trimmings of an earlier vegetable course — large pieces of steamed cauliflower surrounded by green herbs, a tahini dressing with pickled lemons, and grated salted dried egg yolk.
