The story
Norrlyst sits at the junction of Kompagnistræde and Badstuestræde in the heart of Copenhagen. The kitchen, led by chef Fredrik Madsen, focuses on clean, green flavours drawn from good Nordic ingredients. Seasons dictate what lands on the plate – there is a direct line between what grows on the trees and what is served.
Fresh local vegetables and herbs define the cooking. Most produce comes freshly dug from Kiselgården, just 75 kilometres away. Meat is organic Danish beef and pork from local farmers. Fish is landed daily from Fiskerikajen, handled with care. The result is straightforward, flavour-driven Danish cuisine that earned Norrlyst a Michelin Bib Gourmand – a mark of good quality and good value.
At lunch, Norrlyst serves modern smørrebrød built around whatever is in season. The open sandwiches are paired with house-made snaps, craft beer from local breweries, or a classic akvavit with a pilsner.
In the evening, the kitchen offers two four-course options: the Norrlyst menu and the green Norrlyst menu. Both are built on contrasts and respect for the ingredients – gastronomy that stays clear and understandable. The menus change with the seasons, always rooted in good Danish produce.
Groups of eight or more can book the private dining room. The team tailors seasonal menus and drink packages to match the occasion, whether a celebration or a business gathering.
