Ambitious Comfort Food, Done Without Dogma

The kitchen describes its own output as ambitious comfort food, and that phrase holds up under scrutiny. Rather than anchoring itself to a single culinary tradition, Toto draws freely from kitchens around the world. White asparagus arrives with plump prawns, smoked cheese and a deeply creamy egg-yolk sauce, lifted by a Basque txakolina poured alongside. Pickled mackerel takes an East Asian turn with rhubarb kimchi, lemongrass and dried miso – enough umami to balance every sour note. Oven-roasted cod comes with a cabbage ragout, fresh sweet peas and an elderflower sauce; duck breast is cooked to a perfect pink and plated with grilled spring onion, nasturtium, a miso cream and gastrique – a dish where every fundamental flavour finds its place.

The side dishes are not an afterthought. Small new potatoes with lovage hollandaise, cress and grated dried salted egg yolk, and larger potatoes fried in beef tallow with a spiced aïoli, have been singled out as genuinely addictive. A crème brûlée with tonka bean and raspberry compote closes the meal on a precise, satisfying note.

A Wine List That Travels

The wine list is as free-ranging as the food. Funky natural wines sit alongside conventional, more familiar bottles, and around twenty options are available by the glass – a generous range that lets guests move through different styles over the course of a meal. The pairing of an organic 2015 Spätburgunder from Weingut Kranz in the Pfalz alongside the richly composed duck breast illustrates the approach: wines chosen for the food, not for the label.

In just a few years, Toto has successfully become a natural gathering spot for Amager residents with a passion for good food and wine. After a short while, it quickly becomes clear that Toto is far more than just another wine bar with a modest menu. The venue dubs its concept “ambitious comfort food,” and the kitchen truly earns the title—it’s highly skilled and freely draws inspiration from global cuisines without adhering to rigid dogmas. The wine list is equally expansive, spanning diverse regions and styles. You’ll find everything from funky natural wines to more traditional, reliable selections, with around twenty options available by the glass. We begin with a refreshing txakolina from the Basque Country, which pairs brilliantly with white asparagus, juicy shrimp, smoked cheese, and an incredibly creamy egg yolk sauce. This is followed by pickled mackerel prepared in an East Asian style, featuring rhubarb kimchi, lemongrass, and dried miso, which delivers ample umami to perfectly balance the dish’s acidity. Moving on to the mains, we first try a beautifully oven-roasted cod served with cabbage ragout, fresh sweet peas, and an elderflower sauce. Next comes a perfectly pink-seared duck breast accompanied by grilled spring onions, rutabaga, a flavorful miso and garden herb cream, and gastrique—a wonderfully balanced dish where every fundamental taste is present. To accompany it, we have an organic 2015 Spätburgunder from Pfalz’s Weingut Kranz; despite its elegant lightness, it holds its own against the richer flavors of the dish. We must also highlight the exceptional potatoes, which are highly recommended as an addition. Both the small new potatoes topped with lovage hollandaise, watercress, and grated dried salted egg yolk, and the larger ones fried in beef tallow and served with a spiced aioli, are absolutely fantastic and utterly addictive. After a crème brûlée infused with tonka beans and raspberry compote, we leave thoroughly satisfied and delighted. The atmosphere is relaxed, the service friendly and genuinely enthusiastic about the wines, and the crowd is predominantly local. Altogether, Toto is a delightful wine and dining bar that every neighborhood should have, where culinary ambitions are fully realized.
