The story
Opened in 2014, Uformel was conceived as a deliberate counterpoint to the formal, white-tablecloth dining of its older sibling, the Michelin-starred Formel B. The name says it all: this is the informal little brother. Two minutes from City Hall Square, it offers the same rigorous craftsmanship and deep flavours, but in a space where the music is turned up and the mood is light. That spirit earned it a Michelin Recommended distinction, a nod to its ability to balance serious cooking with a genuinely welcoming atmosphere.
The kitchen works with a Modern Cuisine base, but what sets Uformel apart are the Eastern-inspired undertones. You might find soy and seaweed alongside Vesterhavs cheese, beef tartare, or veal sweetbreads. The menu changes with the seasons, built around vegetables and pristine seafood. Guests can choose a five-course tasting menu composed by the head chef, or build their own from an à la carte list of ten to twelve dishes. The cooking is sharp and precise—no shortcuts, no fleeting trends. Every plate is built on deep, fundamental flavours with playful, spicy accents.
The wine list is a serious affair. Sommelier Martin Iuel-Brockdorff Bek curates a selection that ranges from Champagne, Burgundy, and Piedmont to natural wines, all served by the glass or bottle across price points. The restaurant itself has matured into a brighter, more elegant space—wood, textiles, and steel balance the raw with the refined. The energy is youthful but composed, suited for both a weekday treat and a celebratory dinner. Here, they take food seriously, never solemnly.
