The story
In Sankt Peders Stræde, in the heart of Copenhagen’s old Latin quarter, Vækst brings the outdoors in. The restaurant’s centrepiece is a stunning greenhouse that rises through both floors, filled with hanging plants that draw nature right to your table. Soft lights mimic a never-ending Danish summer evening, creating an atmosphere that is both airy and intimate.
The kitchen focuses on fresh Nordic vegetables and herbs, but also serves steak, seafood, and fresh fish. It is modern cuisine rooted in the seasons, prepared with respect for the ingredients. The menu changes regularly, reflecting what is at its peak.
A meal here might begin with cured scallops with cucumber and gooseberries, or a tartare of Danish beef with citrus crème. Main courses range from baked cod with kale, dill, and beurre blanc, to a creamy pearl barley with carrot, king oyster mushrooms, and smoked Vesterhavs cheese. For dessert, the sea buckthorn sorbet with chocolate, white tea oil, and salted caramel is a signature finish.
Vækst is part of the Copenhagen Food Collective (Cofoco), founded in 2004 on the belief that a good meal should not be expensive. The group’s philosophy is one of cooperation and respect—for the guest, the ingredients, and the planet.
The restaurant has earned a Michelin Recommended distinction, a nod to its consistent quality and thoughtful approach to modern cuisine. It is a place where the food, the setting, and the service come together in a genuinely welcoming way.
