The story
In the whitewashed house with blue-paned windows, Restaurant Sletten sits facing the water. The terrace leans down towards the harbour in the small fishing village of Humlebæk, with views across the Øresund. The approach is lined with hollyhocks, white picket fences, thatched roofs and old linden trees.
The restaurant, which opened in 2008, is a love letter to the fish and shellfish that arrive on cutters just 40 metres from the kitchen. They buy sole and halibut from the small boats that go out each morning, and also source hand-caught Norwegian scallops.
The kitchen is led by head chef Kasper Klitten Byrsing, who previously worked at formel B. The menu is modern Nordic-French, with a clear connection to classic French style. The influence of the mother restaurant formel B is present – the dessert Havtorn en Surprise is one example.
The menu changes with the season. White asparagus from Søren Wiuff, fjord prawns, wild blackberries and beach kale appear when they are at their peak. The fish soup with lobster, scallop and squid has become something of a local institution, as has the langoustine with green strawberries and horseradish.
The wine list is one of the most ambitious on the north coast. It ranges from natural, unsulphured wines to small niche producers and grand cru wines from Burgundy and Barolo. There is a strong selection of white wines from the Loire and Burgundy to complement the seafood.
With a view of the Øresund, three oysters and a glass of champagne on the terrace, the experience can sustain you through the darker months. The restaurant is run by restaurant manager and sommelier Jacob Thorning Christiansen, who ensures guests feel welcome. The owners, Kristian Arpe Møller and Rune Amgild Jochumsen, also run formel B, Uformel and Restaurant Palægade in Copenhagen.
