The guide puts it plainly: honest food handled with the greatest craft precision, a fine palate, and genuine enthusiasm for quality ingredients.

The People Behind the Kitchen

The inn is run by Katrine and Emil Rask Bahr, a couple who previously worked at Hærværk in Aarhus and brought that experience — and considerable energy — to this rural setting. Emil's time in Aarhus gave him a broad fluency in wine pairing; he steers the wine selections with confidence, without tipping into the overly experimental. Katrine and Emil together drive the place with what the White Guide describes as great enthusiasm, energy, and skill.

What Arrives at the Table

The cooking balances the familiar and the unexpected in a way that invites everyone in. A five-course menu with snacks, wine pairings, and bubbles lands well under a thousand Danish kroner per person — a striking proposition given the level of execution.

The meal opens with small snacks that immediately signal the kitchen's intent: a crispy cauliflower floret on an onion purée seasoned with a house-blended mild curry; a piece of pork neck confit in duck fat with a "berbeque" sauce of blackcurrants, garden trimmings, and sea buckthorn foraged from the nearby shore.

One dish that drew particular attention from the White Guide was the tomato: a grilled coeur-de-boeuf tomato with wild garlic oil, garlic flowers, and fried sage, brought together with a creamy, rich blanquette seasoned with fennel seeds. A carpaccio course layers lightly grilled beef with crisp salad and grated Vesterhavsost, finished with anise hyssop, bitter nasturtium, pickled ramsons buds, and wood sorrel — details that make the difference between competent and memorable.

Emil's wine pairings match the ambition on the plate. A white verging on orange — Nimbus Albus by Kamara Pure from Thessaloniki — arrives alongside the tomato course, its spiced notes and fresh crispness locking into the tomato's richness and the aromatic herbs.

Sønder Bjert Kro is hardly the kind of place most people just happen upon, but it is highly recommended to make a quick detour for dinner and an overnight stay at the inn, for here honest food is prepared with the utmost craftsmanship, a refined palate, and genuine enthusiasm for quality ingredients. The couple Katrine and Emil Rask Bahr – formerly of Hærværk, Aarhus – run the establishment with great enthusiasm, energy, and skill. The prices are remarkably accessible, so a five-course menu with its accompanying wine list, snacks, and bubbles comes in under a thousand kroner per person. We realize from the very first snack that the kitchen masters flavor combinations of the familiar and the unfamiliar in the finest way, ensuring everyone can partake. A small, crisply fried cauliflower bouquet on an onion purée seasoned with a homemade mild curry opens the palate, ready to receive the next snack: a small piece of pork neck confit in duck fat in a “berry jus” sauce made from blackcurrants and other leftovers from the inn’s garden, along with sea buckthorn from the nearby beach. It is the small details that make the experience so flawless, such as when the lightly grilled carpaccio is layered with crispy salad and grated Vesterhavsost, all sprinkled with flavorful anise seeds, lightly bitter wild lettuce, and pickled ramson buds and sorrel. The evening’s best dish among five favorites is the tomato. A slice of grilled heart-of-beef tomato with ramson oil, garlic flowers, and fried sage is transformed into a new brilliant dish with a creamy, rich blanquette seasoned with fennel seeds. The wines are skillfully selected. Emil Rask Bahr learned versatility in wine pairing during his time in Aarhus and confidently guides the wine selection without it becoming too funky. With the tomato, we get a white wine leaning toward orange, Nimbus Albus, Kamara Pure, from Thessaloniki, whose spiced notes and fresh crispness align perfectly with the tomato filling and aromatic herbs. But the sea cucumber main course is also wonderfully harmonious, featuring a surprising flavor combination of classic mussel sea cucumber sauce and a special carrot wrapped in green leaves as garnish, which completes the tasting experience with its sweetness and texture. The fine dark autumn berries in the dessert are celebrated by a meringue base with salted caramel and a layer of crunchy blackberries topped with bronze fennel. The entire evening and meal are filled with love and joy, as poetically depicted on the glasses with the freshly drawn honey we are served with an exquisite breakfast the following day. The masterclass has arrived at Sønder Bjert.
