The transformation came with head chef Christoffer Brink, a Bocuse d'Or silver medalist whose background includes stints at Frank and Alberto K. He and his partners have turned Pomle Nakke into a restaurant that the White Guide now ranks at a "Very fine level," describing it as an "extremely enjoyable forest trip." The recognition is well-earned: the cooking is French-oriented bistro fare, executed with the precision of a top chef.

Brink’s menu is built on clean, bold flavours. One standout is his signature grilled lobster, glazed with a sweet-and-piquant barbecue marinade, served with an aromatic coconut sauce and butternut squash purée. Another typical dish is butter-steamed white asparagus with a lightly twisted hollandaise, pickled asparagus, and roasted macadamia nuts. The style is simple, flavourful, and precise.

The setting is just as appealing. The large wooden terrace fills with life in season, and the bright, welcoming staff serve both locals and tourists with a smile. The panoramic view of the sea is free, but as the White Guide notes, it is priceless. For the regulars, the restaurant Pomle Nakke is a place everyone knows. That's not surprising, as the painted wooden house smells of long days in the sun, brown summer legs, and waving Dannebrog flags. The restaurant almost seems to grow out of the forest edge and all the way to the cliff's edge, where the panoramic view of the Baltic Sea can take most people's breath away. Until recently, however, there wasn't much gastronomic delight to be found at this address, but then head chef and Bocuse d'Or silver medalist Christoffer Brink (formerly of Frank and Alberto K) and a few partners with money showed up, and now you can safely drive to Pomle Nakke for the food as well. In season, there's life and joy at the tables on the large wooden terrace, and the bright staff, who serve locals and tourists with a smiling surplus, bring atmosphere and pace. Christoffer Brink offers a French-oriented style with an emphasis on flavor. The folk classic has sneaked onto the menu, but otherwise, it's all about French bistro food with a top chef's precision in the cuts. We get perfectly butter-steamed white asparagus with a slight bite and a lightly twisted hollandaise with sharpness from pickled white asparagus and crunch and caramelized roundness from roasted macadamia nuts. We also get Brink's signature dish of grilled lobster, glazed with barbecue marinade and served with an aromatic coconut sauce with ginger and lime and a butternut squash purée. The luxurious shellfish drips with juiciness, and the smoke and the sweet and piquant marinade provide breadth and depth, while the coconut sauce smooths out and soothes the taste buds again. It's simple, flavorful, and precise, and along with the very reasonable prices comes the view, which is free but nevertheless priceless. Pomle Nakke is an extremely enjoyable forest trip in Very Good Class.
