In the heart of Tórshavn, PAZ is chef Poul Andrias Ziska’s tribute to the raw beauty of the Faroe Islands. The multi-course tasting menu shifts with the seasons, shaped by what the land and sea deliver at any given moment. This seafood-focused menu—priced at 3400 DKK—is built around ingredients harvested from the cold, pristine ocean that surrounds the islands. Each delicate catch is treated with care so its natural flavour can speak.
PAZ also draws on deep Faroese food culture, particularly the traditional method of ræst—a fermentation process driven by the islands’ cool, salty air. These techniques create deep, layered flavours that honour centuries-old practices while inspiring modern compositions. The kitchen works closely with local fishermen, farmers, and artisans, ensuring every bite reflects both the wild seas and the commitment to preserving the islands’ natural beauty.
The dining experience is complemented by a wine pairing (2400 DKK) or a non-alcoholic pairing (1400 DKK). The menu is seafood-focused, which means it can be difficult to accommodate seafood allergies, and vegetarian or vegan menus are not offered. Some ingredients are sourced directly from the local natural environment rather than from authorised suppliers.
This approach to Faroese cuisine has earned PAZ two Michelin stars, recognising excellent cooking that is deeply rooted in place. The restaurant is open Tuesday through Friday from 18:00 to 00:00, closed on Saturday through Monday.
