What happens when you bring together French bistro classics and the Japanese flavour palette? At Bistro Ego, the answer is a playful, deeply satisfying collision of two culinary worlds. Since opening in 2021, the team behind this Helsinki restaurant has refused to settle for anything set in stone. Instead, they keep an open mind and a childlike curiosity, constantly evolving. When the idea of fusing French and Japanese cuisines began to stir, they decided to try something completely new – and it works.

Under the direction of chef Miika Keskitalo, that fusion takes form in dishes that make the taste buds hum. A beef tartare gets the Parisienne treatment alongside soy-pickled shiitake and togarashi. A classic bouillabaisse meets kombu. A dark chocolate namelaka is finished with Japanese rose granite and ginger. On the Menu du Chef, highlights include a tuna tataki with yuzu and finger lime, and teriyaki-glazed beef cheek with braised red cabbage and a brown butter béarnaise. It is this kind of bold pairing that earned the restaurant its place in the Michelin selection for 2026.

A space with history

Bistro Ego occupies two floors on Korkeavuorenkatu. Upstairs, two beautifully renovated dining rooms; downstairs, a brick-vaulted cellar restaurant, a private cabinet, and a wine bar. The interiors are deliberately not brand-new – from the start, every piece of furniture and lighting was sourced second-hand. The restaurant fights against disposable culture, using recycled tableware and even refinishing plates to extend their lifespan. White tablecloths have been phased out to reduce laundering and transport impacts.

Sustainability as a principle

In the kitchen, the philosophy is just as considered. Ingredients are predominantly Finnish and Nordic, with a constant push to increase local sourcing. Kitchen equipment is chosen for low energy consumption and smart technology. Food waste is measured daily using a dedicated scale, and the team uses raw materials with precision – no cutting carrots into wasteful shapes. It is a holistic approach that makes the dining experience feel both indulgent and thoughtful.
