Chef Nicolas and His Open Kitchen

Since 2011, Chef Nicolas has been the heart of this restaurant inside the fortified walls of Aigues-Mortes. His philosophy is straightforward: taste and origin come first. "If it's organic, even better," he says. That commitment earned him the title of Maître Restaurateur in 2017. His kitchen is open, so guests watch him and his team work – and he often pauses to greet them.

A Cuisine That Blends Worlds

Nicolas describes his cooking as "an explosion of freedom and creativity." He mixes traditional French techniques with flavours picked up during his travels in Thailand. The result is a modern cuisine that feels both grounded and surprising. The Michelin guide, which recommended the restaurant for 2025, highlights dishes such as tom kha kung of prawns in coconut milk and a kushikatsu of Camargue bull prepared Wellington-style. Everything is made from fresh, local, labelled, and organic ingredients sourced through short supply chains.

Dining in the Medieval City

The restaurant sits in a 13th-century setting, with a wrought-iron glass door that hints at the contemporary space inside. The atmosphere is bistro-chic – relaxed but polished. After a meal, guests can stroll the pedestrian streets or explore the salt marshes and the Camargue landscape.

Menus Built on Trust

There is no à la carte. Instead, the chef offers two surprise menus that change regularly. The Découverte (€43) is a three-step option (mise en bouche, then entrée-plat or plat-dessert) and is served at lunch only, except weekends and holidays. The Signature menus come in four steps (€49) or five (€69), each including a mise en bouche, entrée, plat, and dessert. The chef adjusts for allergies and dietary needs, making each meal personal.
