The story
At Le Petit Restaurant in central Ajaccio, Chef Vincent Boucher crafts a modern seasonal cuisine rooted in the island’s best produce. The dining room is intimate and elegant, a setting that lets the food speak – and the food speaks of Corsica.
Boucher’s philosophy is distilled into a simple mantra: "Le produit, le produit, le produit." Everything starts with the ingredient. He works directly with local growers and artisans: Anne Nocera for citrus, l’Ortu di San Ghjuva for tomatoes, Émilie Borel’s olive oil from Moulin d’Oltremondi, Moulins Sanpiero for flours, and Gambarelli for brocciu. Herbs from the maquis are gathered with care. Each plate tells the story of these collaborations.
Boucher was recently intronisé Maître Cuisinier de France, one of the highest distinctions in French gastronomy, and Le Petit Restaurant is recommended by the Michelin Guide. These recognitions reflect his technical mastery and unwavering commitment to terroir – a cuisine that is both authentic and inventive, always respectful of the seasons.
There is no fixed à la carte. Instead, Boucher offers a blind menu that changes weekly according to arrivals. Guests surrender choice and receive a sequence of dishes built around what is freshest. The menu is paired with wines from carefully selected Corsican vignerons or refined non-alcoholic alternatives. It is an experience of discovery, renewed with each visit.
Desserts are lighter, less sweet, focused on the pure flavour of vanilla, chocolate, citrus or tea – proof that pleasure and restraint can coexist.
