The Alchimy Story

In 2012, Laurent Miquel took on a bold challenge: to breathe life into a long-abandoned notary’s office at 10-12 place du Palais in Albi. Joined by his nephew Nicolas and niece Laura, he opened Alchimy in September 2014. What began as a brasserie soon grew into a four-star hotel and a restaurant that has become a local institution.

The team expanded when they met Adrien Cagnelle, and together the four partners have built a place they describe as a "chic and refined" house, but above all a welcoming, convivial space. Their combined experience, gathered in fine establishments across France and abroad, is the alchemy behind the name.

The Restaurant and Atmosphere

Alchimy describes its cuisine as "bistronomique" – a nod to accessible, high-quality cooking. The style fits perfectly within the modern cuisine approach that earned the restaurant a Michelin Recommended distinction. Meals are served in a setting that mixes elegant Art Deco touches with a relaxed, friendly energy. There is also a bar, Le Speakeasy, and a sunlit terrace for warmer days.

In the Heart of Albi

The restaurant sits in Albi’s historic heart, just a short walk from the UNESCO-listed Sainte-Cécile Cathedral. The team are passionate about their city, and that sense of place runs through everything they do. Whether for lunch or dinner, Alchimy offers a polished, unfussy take on modern French dining in the Tarn.
