Le Saint Hilaire, in the village of Saint-Hilaire-de-Brethmas just minutes from Alès, is the project of Gwladys and Sébastien Rath. The restaurant occupies a bright, elegant house where noble materials meet Cévennes spirit. Every detail is designed to celebrate the region’s flavours in a calm, welcoming atmosphere.
Sébastien Rath’s cooking is creative, committed and deeply rooted in the local territory. He works with producers from the area – trout from Les Fumades, pigeon from Costières, forgotten vegetables grown a few kilometres away – to build dishes that tell a story of transmission, terroir and emotion. The menu changes constantly, offered as three surprise tasting menus that reflect a free, seasonal and audacious approach. The result is a contemporary French cuisine that is both personal and grounded.
Gwladys Rath welcomes guests with discreet warmth, embodying a service style that is generous and natural. Trained in sommellerie, she shares her favourite wine pairings and the stories behind each product or artisan. Her presence makes the experience feel personal and unhurried.
In fine weather, the restaurant opens its elegant terrace, arranged around a large olive tree. The outdoor setting is peaceful and luminous, perfect for a sunny lunch or a dinner under the stars. It extends the restaurant’s spirit: authentic, convivial and deeply anchored in the Gard countryside.
