Ancestral – Modern Cuisine in Angers | Michelin Recommended
In the historic Doutre quarter of Angers, Ancestral is a restaurant built on a thoughtful paradox: honouring old culinary traditions through a thoroughly contemporary lens. Chef Kévin Bougard, whose career includes stints at the houses of Joël Robuchon in Monaco and Daniel Boulud in Montréal, and more recently at Angers’ own Odorico, brings that experience to bear in a setting that values authenticity over show.
The kitchen works exclusively with local producers, selected for their ethical and sustainable practices—a commitment that has earned the restaurant the 3 Ecotables label. The menu changes with the seasons, letting ingredients speak for themselves while being shaped into dishes that feel both inventive and grounded. This is modern cuisine that respects its roots, each plate telling the story of a product, a farmer, and a tradition revisited with finesse.
The wine list mirrors the kitchen’s philosophy: organic, biodynamic and “living” wines are given pride of place, with a special focus on Anjou’s local vignerons, alongside carefully chosen bottles from Portugal. Adèle Guilloteau, who trained alongside Chef Bougard at Odorico, now leads the front-of-house team, ensuring the service reflects the same quiet dedication to craft.
This approach has earned Ancestral a place in the Michelin guide—a recognition that highlights the restaurant’s ability to balance creativity with environmental responsibility, and to make tradition feel genuinely fresh.
