The story
At 17 rue Boisnet in Angers, Lait Thym Sel – whose name hints at the elemental trio of milk, thyme, and salt – presents a dining experience built around the seasons and the produce of local growers. The restaurant earned a Michelin star in 2026, a recognition that speaks to the precision and soul in its cooking.
The menu is divided into two moods: “Déjeuners Solaires” (solar lunches) and “Dîners Lunaires” (lunar dinners). Each bears a poetic name that evokes the central role of fire in the kitchen. At lunch, the three-course “Mise en lumière” (49€) can be served in one hour for those on a limited schedule, while the six-course “Le chant des flammes” (95€) offers a deeper exploration. A vegetarian version is available on request.
Evening menus are more elaborate. The five-course “Incandescence” (85€) is served Tuesday through Thursday, as is the seven-course “Crépitement des étoiles” (120€). For the full experience, the nine-course “La danse du feu” (145€) is available any evening. All menus are served to the entire table, and the kitchen cannot accommodate completely lactose-free, gluten-free, or egg-free diets, so allergies must be signaled in advance.
The restaurant’s own words describe the menus as “taking life along the seasons of our producers and our inspirations.” This commitment to seasonality and local sourcing is the foundation of its French cuisine, and the Michelin star confirms the consistent high quality of the cooking. With air conditioning, a private chef option, and both lunch and dinner service, Lait Thym Sel is a refined yet welcoming destination in the heart of Angers.
