The story
Brasserie Brunet opened in 2018, the project of chef Laurent Petit and his wife Martine. In 2021, they passed the reins to Nicolas Guignard – a chef who had worked beside Laurent for ten years – and his partner Pauline Lemettre, now the dining room manager. Together, Nicolas and Pauline have made the brasserie their own, centering every dish on the produce of nearby farms, pastures, and lakes.
The kitchen works exclusively with short supply chains. The menu changes daily, driven by what fishermen, breeders, and market gardeners bring. Nothing is wasted: bones become broths, skins turn into crisps, roots are simmered into sauces. This is French cuisine that lets ingredients speak, with a depth of flavor that comes from patience and respect.
That honest, ingredient-first approach earned Brasserie Brunet a Michelin Bib Gourmand – a mark of good quality, good value cooking. It is a fitting recognition for a team that puts generosity and eco-responsibility at the heart of every plate.
The brasserie sits between the train station and the old town of Annecy, open for lunch and dinner daily except Sunday and Monday.
