On the shores of Lake Annecy, at the foot of the Alps, the Auberge du Père Bise is a legendary address. Here, chef Jean Sulpice runs a two Michelin-starred restaurant that redefines high-altitude cuisine. The setting is spectacular: wide bay windows and a terrace offer a panoramic view of the lake ringed by mountains. This landscape anchors the chef’s cooking.
A Savoyard and a keen mountaineer, Jean Sulpice draws his inspiration directly from the terrain. He describes his cuisine as instinctive, audacious, and in balance, without pretence. It is a cuisine that brings together the fera from Lake Annecy, game from the surrounding forests, aromatics from the garden, and wild herbs. The menus, offered in 6 or 8 explorations, are a celebration of the Alpine terroir in all its diversity.
The chef’s commitment to the land is reflected in the network of producers he works with—a goatherd, a fisherman, a baker, a market gardener—who shape the biodiversity of the region. This sustainable approach has earned the establishment a Michelin Green Star.
The wine list is equally impressive. With 30,000 bottles and 5,000 references, it is a deep dive into the vineyards of the former Duchy of Savoy and beyond. Sommelier Maéva Rougeoreille, who received the 2025 Michelin Sommelier Prize, guides guests through this collection.
For a more relaxed experience, the restaurant Le 1903, named after the year the Auberge was founded, offers a different perspective. Housed under a panoramic glass roof overlooking the old port of Talloires, it serves a cuisine that is instinctive, generous, and rooted in tradition, revisiting French classics with the chef’s signature touch. This is a more accessible yet equally inspired expression of Jean Sulpice’s culinary vision.
