The story
Le Bouillon is an independent bistronomic restaurant in central Annecy, a few minutes’ walk from the train station. Open since 2015, it has built a steady following for its concise, season-driven menu that draws on the produce of the Pays de Savoie.
Mathieu Chauvin trained and worked abroad – in England and the United States – before settling in Haute-Savoie. His cooking is personal and precise, shaped by those travels but firmly anchored in local ingredients. He emphasises respect for the product, contemporary techniques, and a kitchen built around house-made bouillons, jus, and condiments.
The short carte changes regularly with the seasons and the chef’s inspirations. Dishes are described as “readable and generous” – clean, focused plates that let the ingredients speak. The style is modern cuisine, but one that values simplicity and elegance over show. At lunch, a two- or three-course formula is offered, updated weekly and published on social media.
The dining room is designed for comfort – contemporary, warm, with well-spaced tables that make it a natural choice for business lunches as well as dinners with friends or family. The service is described as discreet and efficient, and the atmosphere deliberately unpretentious. Michelin’s Recommended distinction reflects the consistency and quality that regulars also praise in their reviews: “always a sure bet”, “quality constant”.
Le Bouillon remains a family-run, independent restaurant – true to its name, a place that makes its own broths and builds flavour from the ground up, season after season.
