Not content with running the neo-bistro Bloomer, brothers-in-law James Bloomer and Pierre Marcolin have teamed up with their chef Paul Belison (ex-Elements in Biarritz and La Datcha in Paris) to double down with Pebble, a burger joint that’s already making waves on Annecy’s dining scene. In the space once occupied by Canailles, right next to the Atome indoor climbing gym, Pebble draws in a hungry crowd of climbers fresh from the wall. But those who prefer to keep their feet firmly on the ground can feel rest assured: with its ochre cinder block walls, cleverly designed dining platform and plush sofas, this bright, finger-licking spot makes you forget it’s tucked behind a climbing gym, nestled in the hybrid Nouvelles Galeries lifestyle center. As for the squishy, plump burger puns, they’re stacked with Aubrac beef patties – minced in-house and perfectly smashed (also available in a vegan seitan version), topped with cheddar, onions, ketchup, yellow mustard and pickles, delivering on the Maillard reaction’s golden promise.
