The story
Just outside Apt, surrounded by vines and cherry trees, La Table de Pablo is the restaurant of chef Thomas Gallardo. The setting is classic Provence: a tastefully decorated dining room and a terrace under a wrought-iron pergola, where the sound of cicadas accompanies the meal. It’s a place that feels both carefully considered and welcoming.
Gallardo describes his cooking simply: “I work with real products!” He transforms fresh, raw ingredients on-site, letting the produce speak. The menu is a carte blanche – a surprise for lunch or dinner – built around seasonal finds. A photo on the site shows a soup of green apple and ginger with mascarpone cream and a translucent basil cigarette; another pairs mackerel with Granny Smith, girolles, and wasabi. These are dishes built on contrast and precision. The restaurant holds a Michelin Bib Gourmand, a recognition of its consistent quality and good value.
Lunches and dinners are served in a quiet hamlet, with parking available and outdoor seating for those who want to soak up the Luberon air. The kitchen also offers vegetarian options, and takes reservations for the set-price carte blanche. It’s a straightforward, honest dining experience – exactly what the Bib Gourmand rewards.
