The story
Lisa and Jérôme run their restaurant from a house set at the edge of the Cuisance river, in the heart of Arbois. The dining room is wrapped in wood, lit with a soft glow, and furnished with hand-shaped ceramics and stone-carved knives. It is a discreet and lively address, built over seasons, gestures, and encounters.
Jérôme’s cooking is instinctive. Each plate tells a story of exchange: what the season offers, what local producers bring, what he intuits and adjusts. Precise cooking, deep sauces, and a readable, sensitive modern cuisine that is both rooted in the Jura territory and free enough to dare. The restaurant’s Michelin Bib Gourmand recognises this quality and value, rewarding a kitchen that speaks to the senses without pretence.
Lisa’s desserts extend that intention. Inspired by nature, fruit, citrus, and herbs from the garden, they play with textures and a lively sweetness that reveals the poetry of the meal.
Around the table, an attentive team moves with discretion. Sauces are poured tableside, aromas drift into the plate—kitchen and dining room are one movement.
The wine list, curated by Lisa and Jérôme, holds over 300 references. Local producers and the richness of Jura wines take centre stage. It is an exacting yet accessible collection, reflecting a deep taste for what is just, local, and well-made.
At Le Bistronôme, guests come for more than a meal. They find a pause, a moment apart, a taste of the real.
