The story
Les Caudalies is a family-run hotel and restaurant set in a 19th-century bourgeois house, surrounded by a 40‑are park along the Cuisance river in Arbois, Jura. Created in 2009 by Nadine, Claire, Claude and Philippe, the property has been completely transformed – blending the authenticity of the original building with a contemporary, chic spirit. It offers a peaceful, green haven where guests can stay in one of nine individually themed rooms (Carpe Diem, Romantique, Voyage, Vin, 1835…) and dine on Modern Cuisine that draws deeply on local terroir.
The gastronomic restaurant is led by Chef Nadine TROUSSARD, who proposes three distinct menus: Bistrot, Symphonie, and Signature. Each changes with the seasons, built around the best produce the Jura has to offer. A full à la carte menu complements the set options. In summer, the shaded terrace overlooking the park is open for lunch and dinner – a serene spot to enjoy the chef’s precise, ingredient‑driven cooking. The Michelin guide has recognised this consistency and quality with a Recommended distinction, a testament to the kitchen’s commitment to Modern Cuisine rooted in regional flavours.
Philippe TROUSSARD’s passion for wine is on full display in the restaurant’s vaulted cellar. The space hosts tasting evenings and aperitif tastings, and the wine list – curated with imagination – is a destination in itself. Whether you opt for a full wine pairing with the Symphonie menu or simply explore the cellar’s selection, the sommelier’s craft enhances every dish. Les Caudalies is closed Sunday and Monday, so plan accordingly for a meal that balances elegance with the warmth of a family welcome.
