La Chassagnette sits in the heart of the Camargue, the vast delta of the Rhône. Here, the restaurant’s own potager – a kitchen garden drawing from the unique soil of the region – is the true master of the creative tempo. Vegetables reign, each waiting for the ideal moment of harvest. The cuisine of chef Armand Arnal is shaped by this rhythm: intuitive, stripped back to essential harmony, subtle in its fertile sobriety. The hand of the gardener passes to that of the cook, who leads with intuition a menu that underlines the tastes of nature without constraining them.
This deep connection to the land has earned La Chassagnette a Michelin star, recognition of high-quality cooking that stays true to its source. The restaurant offers a gustatory discovery in six notes of flavour. Guests choose between two paths: a purely vegetable menu, an ode to seasonality and the garden, or a fauna & flora menu that marries vegetables with fish and meats from the region. All preparations are gluten-free, and the meats come from France, the fish from the Mediterranean.
Armand Arnal has been at La Chassagnette for twenty years, and the restaurant recently celebrated this milestone with a special edition of Vibrations Sonores. His cooking is described as “sensual and spiritual inspirations” that blossom from encounters near and far. The atmosphere reflects this: the restaurant opens onto the garden, allowing guests to dine surrounded by the source of their meal. Outdoor seating is available, and the space can be privatised for groups, even into the potager itself.
The main menu is a six-course exploration, priced at €140. A children’s menu is available for those up to 12 years, featuring a bucolic salad, a choice of organic chicken or line-caught fish from Grau du Roi, vegetables from the garden, Camargue rice, and a seasonal sorbet or ice cream. The sommelier team offers balanced and original pairings, including a non-alcoholic accord made with produce from the garden, a wine and spirits pairing, and a transversal discovery that moves from sake to wine to alcohol-free creations. All drinks come from independent producers working close to nature, mostly organic, biodynamic, or natural.
La Chassagnette serves lunch from Thursday to Monday and dinner on Thursdays, Fridays, and Saturdays. The restaurant is wheelchair accessible, offers air conditioning, and caters to vegetarian, vegan, and gluten-free diets. It is a place where the garden’s rhythm sets the pace, and the cooking is an honest reflection of that land.
