The story
In the heart of Arles, Chef Jean-Luc Rabanel has spent over fifteen years refining a cuisine he calls Greenstronomie. This is not a passing trend toward healthy eating — it is a deeply held philosophy that places vegetables, roots, plants, leaves, flowers, and wild herbs at the center of every plate. A Maître Cuisinier de France, Rabanel is a genuine pioneer of plant-led fine dining, building his compositions so that each bite delivers a true shock of flavour.
The restaurant’s Michelin Recommended status reflects the precision and character of this high-level gastronomy. Diners choose between two distinct experiences. Le Greenstronome is the flagship, where the full expression of the chef’s vegetable-focused artistry unfolds in multi-course menus. For a more relaxed atmosphere, Le Greeniotage offers a bistrot-style setting, with the same commitment to bold, clean tastes. Both venues share the same kitchen and philosophy, and both are housed within the same 17th-century building on Rue des Carmes.
Rabanel’s cooking is imaginative and uncompromising. His approach to vegetables is not a garnish or a side — it is the main event. Techniques such as cooking methods for vegetables, the art of seasoning, and the creation of broths, juices, and sauces are taught in the cooking classes he offers, where guests can learn to master dishes like a crispy mushroom and foie gras millefeuille with a tangy jus, or sea scallops cooked en croûte with citrus butter.
For those who wish to stay, Les Maisons Rabanel also offers guest rooms and a house called Les Appartés, allowing guests to remain at the heart of the chef’s gourmet universe. Whether for a meal or a longer visit, the experience is anchored in a return to essentials: flavour, craft, and the living ingredient.
