Chef Baptiste Avetand and his partner Florine Dewulf bring together their shared passions – the art of hospitality and culinary creation. Avetand’s cooking is generous, assertive, and deeply gourmand, rooted in family memories but revisited with a modern touch. His cuisine respects the seasons, using rigorously selected, high-quality ingredients to deliver something both authentic and surprising.
There is no à la carte at Osmose. Instead, diners choose between three, four, or six courses, each a progression through harmonies that the chef composes from the best of the market. A recent lineup included café, mackerel, artichoke, and wasabi, then asparagus with rhubarb and kohlrabi, all finished with a light touch of combava, fennel, and wild garlic. A soft-pairing option – cold infusions, kombuchas, botanical sodas, and fresh juices – complements the experience for those who prefer not to drink alcohol.
