The story

Les Huîtres de Trousse-Chemise: Fresh Oysters in Ars-en-Ré

The Oyster Farmer and the Marshes

Les Huîtres de Trousse-Chemise sits quietly along the salt marshes outside Ars-en-Ré. The operation functions as a practical oyster farm and seafood stand, a spot recently noted by Le Fooding for its honest approach. Franck Moreau manages the cabin on the northern tip of Ré Island. You step up to the window to order before claiming a picnic table.

Wooden Baskets and Coastal Catch

Orders arrive in shallow woven crates. The house special features casa’s n°3 oysters alongside buttered bread, lemon wedges, and a sharp shallot vinegar. Raw palourde clams rest next to polished whelks and large pink shrimp. A single pork sausage called Charentais grillons finishes the selection, marking the only cooked option at this oyster farm.

Picnic Benches and Open Air Service

A megaphone calls your table number across the gravel yard. Guests settle onto sturdy benches under the open sky while sipping local wine. The layout stays brisk and informal. Families prefer the casual pace.

On the northern part of the island, right near the famous Petit Bois de Trousse-Chemise, Franck Moreau’s oyster farmer’s cabin is the best spot for a fresh snack with views of the salt marshes. After placing your order at the bar, grab a seat on a picnic bench with a glass of wine in hand, while waiting for them to call out your name over the megaphone when it’s ready! Served in wooden baskets: the casa’s n°3 oysters with a classic combo of buttered bread, lemon and shallot vinegar; raw palourde clams, whelks, big pink shrimp; or even Charentais grillons , the house’s only porky exception. // V.B.
