The story
In the Ardèche village of Neyrac-les-Bains, near Aubenas, Bistrot Brioude brings together the region’s produce and Japanese influences. Chef Claude Brioude’s cooking is rooted in the local terroir, with a strong emphasis on vegetables and organic ingredients, refreshed by the precision of Japanese cuisine. This approach has earned the restaurant a Michelin Bib Gourmand, recognising good quality, good value cooking.
The bistro menu changes weekly, drawing from local markets. Alongside family recipes and Ardèche classics updated for today, the kitchen regularly offers themed menus – a Japanese izakaya menu (a typical inn-style meal) and a cochonaille menu, a traditional pork feast. The setting is warm and welcoming, with a terrace shaded by century-old plane trees planted by the chef’s grandfather, overlooking a cascade of blue hydrangeas.
Bistrot Brioude is open for lunch Tuesday to Saturday and for dinner Thursday to Saturday. The adjoining gastronomic restaurant, with its clean, light-filled dining room facing the Ardèche valley, serves a more elaborate tasting menu on Wednesday lunch and Thursday through Sunday. Both spaces feature permanent exhibitions by local artists.
