The kitchen’s modern cuisine is rooted in the Ardèche’s best produce: Ardèche trout, free-range chicken, veal from local pastures. The May 2026 carte offers a choice of three courses (€35) or four courses (€40), with supplements for certain dishes. Starters might include green asparagus with poached egg and Parmesan siphon, or trout marinated in fresh herbs with tangy vegetables. Main courses range from chicken with a yakitori-style sauce and delicate potatoes to fillet of daurade royale cooked on the skin with creamy risotto. For those who appreciate offal, the fricassée of veal sweetbreads with morel cream and homemade gnocchi is a highlight.
